I love strawberry shortcakes so when I saw this pan set in TJ Maxx, I knew that I had to make some.

d07These little cakes can also be made in a muffin tin if you do not have a pan that makes muffin tops.

Inside the muffin top, I added diced strawberries and topped with the whipped cream cheese topping.

I really love strawberries so I decided to add more on top of the whipped cream.

Perfect! Now, I couldn’t wait until after dinner to eat these whole. 🙂

Mini Strawberry Shortcakes

Ingredients
  1. 1/3 cup unsalted butter, softened
  2. 3/4 cup of sugar
  3. 1 egg
  4. 1 tsp vanilla extract
  5. 1/2 tsp almond extract
  6. 2/3 cup milk
  7. 1 1/2 cup cake flour
  8. 1 tsp baking powder
  9. 1/4 tsp salt
  10. Whipped Cream Cheese Topping (recipe below)
  11. 6-8 diced strawberries
Instructions
  1. Preheat oven to 350 degrees.
  2. In a medium bowl, sift together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat together butter and sugar until light and fluffy. Beat in egg and extracts.
  4. Add dry ingredients and milk alternating and ending with the dry ingredients.
  5. Add batter in greased muffin pan 2/3 full and bake for 16-18 min.
  6. When done, remove from oven and cool before adding topping or frosting.
  7. Once cooled, scoop a hole in your mini shortcake and add 1/2 tsp of diced strawberries.
  8. Pipe Whipped Cream Cheese Topping on to your cake and add more diced strawberries on top.

Whipped Cream Cheese Topping
This whipped cream is whipped with cream cheese making for a great dip or topping to any vanilla cake.

Ingredients
  1. 4 oz cream cheese (softened)
  2. 1/4 cup sugar
  3. 1 tsp vanilla extract
  4. 1/4 tsp almond extract
  5. 1 cup heavy whipping cream
Instructions
  1. In a stand alone mixer, beat together cream cheese and sugar until well combined.
  2. Add in vanilla and almond extract and mix.
  3. Once all ingredients are mixed well, pour whipping cream into mixture and whip for about 2 minutes.
  4. Scrap sides and bottom of bowl and continue mixing until a stiff peak form.
  5. Pour in bowl to use as dip or put in piping bag to decorate cakes.
